Almond, Raisin and Spelt Baby Master

Almond flour adds a wonderful softness and slight sweetness to a loaf, as well as nutrition and protein from the nuts. The honey and raisins give the loaf almost a tea bread–like flavor. This soft loaf has a close crumb and is lovely eaten with cheese and/or jam.

PREP: Feed all of your starter 30 grams (¼ cup) of flour and 30 grams (⅛ cup) of water. Once it is bubbly and active, it is ready to use in your dough. Prepare a mini banneton or small mixing bowl with rice flour (see here) and set aside a baking pan with a lid, plus parchment paper.
